I need to confess that I was a bit purist with food until I had ceviche with watermelon, things change, and that's great ;)
Contemporary fusion cuisine is usually traced back to the 80's, when chefs like Roy Yamaguchi and Wolfgang Puck started to purposely combine flavors from various cultures.
